Ocado now stock Nutritional Yeast Flakes!

Yes, I discovered today that Ocado stock the two varieties of Marigold Engevita Yeast Flakes, original and the one with added B12. This is so useful as I will no longer have to pay postage to buy nutritional yeast, I can simply add it to my weekly Ocado shopping delivery.

Nutritional yeast is great to make sauces with, an ingredient for seitan and super on soups to name but a few uses.

 

As a Vegans Kung Pao Tempeh

Further to my review of the 30 Minute vegans Taste of the East here is a picture of the Kung Pao Tempeh p.123 I made for dinner a few days ago.

It is really tasty, however,  if you love things hot like I do I  would recommend adding more chillies than the recipe states.

As a Vegan’s top Vegan Sausages.

It is always nice to have something quick and easy on standby for a quick weekend breakfast. I find sausages perfect for this in order to create a sandwich fast. As my partner seems to be quite changeable when sausages are involved, we have tried and tasted many.

Taifun organic Grill Sausage's

 

The Taifun Organic Grill Sausage’s come in a pack size of four, perfect for two to share . You can fry or grill these sausages but as the Taifun sausages contain very little fat, it is best to brush them with oil before grilling to prevent them drying out. These sausages and rather soft to bite into making them less sausage-like  than the others, however for taste and content these are my favourites. Available from Ocado.

Ingredients: Tofu 80% (water, *soyabeans, coagulating agents: nigari, calcium sulfate), *sunflower oil, *oatmeal, vegetable broth (sea salt, yeast extract, *potato starch, *leek, *carrots, *sunflower oil, *nutmeg, *parsley, *celery), *pepper, *coriander, *garlic, *ginger, *nutmeg, *mace, *oregano, *parsley.

Linda McCartney Frozen Sausages

 

The Linda McCartney Sausages, are frozen so they do not have to be consumed all at once.They are good value for money as there are 6 in a pack for just £1.89.  They can be oven cooked, fried, grilled or barbecued. Whilst these sausages are tasty while being eaten it is the fact that my body reminds me that I have eaten them for the rest of the day as they seem to give me heartburn. Available from most supermarkets.

Ingredients:Rehydrated textured wheat protein (63%), vegetable oil, water, pea and wheat protein (4%), flavourings, rusk, stabilizer – hydroxy propyl methyl cellulose.

Redwood Lincolnshire Style Sausages

 

The Redwood Vegideli, Lincolnshire Style Sausages are ready to eat but in my opinion they are nicer heated up. You can do this by shallow frying, grilling or microwaving. I find spraying with a little oil and grilling gives the best results, however, I do not have a microwave so I can not comment on that method. Available from VeggiStuff.

Ingredients:Water, wheat gluten, onion, sunflower oil, wholemeal rusk, soya protein, natural flavouring, salt, unrefined sugar, yeast extract, dried herbs, stabiliser (methyl cellulose), spice extracts, dried garlic, malt extract

Holland and Barrett frozen Sausages.

 

The Holland and Barett, premium vegetarian sausages are frozen. They can be  shallow fried or barbecued, I have only tried frying and they do take a while to heat all the way through.These are perhaps the firmest to bite into of the 5.

Dragonfly Soysage

 

The Dragonfly ‘Soysage” is organic and somewhat shorter than other sausages, however, the sage gives them a great flavour. They can be eaten hot or cold, oven baked, grilled, barbecued or fried.

Ingredients; Soya bean fibre and curd (64%), cooked brown rice (34%), tamari, sage, black pepper, sea salt, cooked in sunflower oil.

Vegan Paella!

Vegan Paella

This is a quick paella I made up with just a few ingredients, perfect for using up bits of vegetable and leftover salad ect, it serves 2 as a main.

2 tablespoons of Annatto oil

145g Bomba Paella Rice

500ml of vegetable stock (I used Kallo)

1 Red Bell Pepper

1 Red Onion (finely chopped)

A handful of frozen peas

8 mini plum tomatoes (seeds removed)

Vegan Chorizo (Chopped)

Quarters of lemon to squeeze over when served

First, add the oil and fry the onion, vegan chorizo and pepper for 5 mins. The annatto oil will colour everything much more economically than saffron and adds to the flavour in my opinion. Add the rice and peas then coat them in the pan. Add the stock and tomatoes and simmer for on low for 13 mins, do not stir.

You will need to keep a watch so it does not dry out.  If it does just add a really small amount of stock or water, do not be tempted to add too much or it will go slimy!

Once it is ready, stir it to distribute the ingredients and serve in bowls with lemon quarters to squeeze over. Enjoy!

Easy Vegan Croutons from As a Vegan.

My partner requested croutons to be served when I make salad and my quest began. I must admit I am sometimes one for shortcuts so I looked for ready made croutons only to discover most of them contain milk for some unknown reason! This helped me to decide to try and make my own and was pleased with the result, here is what I did;

  • I very lightly toasted fresh bread in the toaster
  • Cut it into cubes
  • Minced  2 cloves of garlic
  • Heated some vegetable oil in a wok
  • Added the cubed bread and minced garlic the wok
  • Fried til golden brown

 

These croutons are great in salads and with soup, try cooking with chilli oil for spicy croutons.

The Railway Hotels Vegan Falafel yummy!

Further to my earlier post named ‘As a Vegan I have discovered The Railway Hotel, Southend-on-Sea’ I thought I would add this picture of some tasty falafel eaten at a recent visit. Unfortunately I forgot to photograph the vegan chocolate cake as could not wait to eat it!

Bobby Jo’s Dairy Free Ice Cream Sundae!

I visited Bobby Jo’s Diner today for lunch and thought I would post this picture of the wonderful vegan sundae I had there!

Decorated like an authentic 50′s diner, Bobby Jo’s is a truly special experience. Each booth is named after a 50′s star and the seats are like those from hotrods. Although Bobby Jo’s feed meat eaters too it is refreshing to see that they have a vegan menu with burgers, hotdogs, milkshakes and of course Ice-Cream Sundaes!

As a Vegan the service I received at Keralam Restaurant, Southend-on-Sea was informative and inclusive.

Keralam is a South Indian restaurant, it is not strcictly vegan, however the staff are really helpful and advise of the vegan items on the menu of which there are many.  I would highly recommend the Spicy Tomato Curry, the Spinach and Lentil Curry and the Plain Dosa.

The latest vegan cupcakes to be enjoyed As a Vegan yum!

Strawberries from my Dad's garden.

I love making vegan cupcakes they are so quick to make and delicious too. The recipe I use is from  “Vegan Cupcakes Take Over The World‘ by Isa Chandra Moskowitz and Terry Hope Romero page 37. The Russian Doll cup measures from my previous post really help with this recipe.

I made the vegan frosting up using;

My Dad’s home-grown strawberries

3/4 cup unrefined powdered sugar

3/4 cup vegan margarine

1/8 cup  soy milk

1tsp vanilla extract

I used the basic chocolate cupcake recipe on page 37.

Viana Tofu really firm for cooking As a Vegan!

I must talk about Viana Tofu as they have changed the way I cook. Before discovering Viana tofu many recipes called for extra-firm tofu. All I could find was silken style so I was unable to try them. Now it is a different story, Viana tofu is so good to work with, organic and is available in a variety of flavours such as Hazeltofu, Green Life Sprout Tofu, Real Nigari Tofu and my favourite Real Smoked Tofu. The Real Smoked Tofu is so tasty it can be simply stir fried  or sliced and used in sandwiches or rolls (great with a chilli relish).
